In a large bowl, mix olive oil, paprika, Italian seasoning, sugar, cornstarch, onion powder, garlic powder, and salt.
Pat the chicken breasts dry to remove excess moisture, then cut them into 1-inch pieces. Add them to the bowl with the seasonings and toss until evenly coated—I like to use my hands, but tongs work just as well.
Arrange the chicken in a single layer in the air fryer basket. Do not overcrowd—cook in batches if necessary.

Serve with your favorite dipping sauce or add them to a salad, wrap, pasta or rice bowl.
Notes
Air Fry Time: In my air fryer, the chicken is done after 5 minutes. This time may vary slightly, depending on how crowded the air fryer is. You can check after 5 minutes: Cut a piece in half—the inside should be white with no pink. If there's any pink or translucent meat, cook for another 1-2 minutes. Or use a meat thermometer, the internal temperature should reach 165°F (75°C).
